Legend has it that Anne de Lusignan or Anne of Cyprus, brought back the fruit bat from Cyprus in 1432, during her marriage to Louis I of Savoy.

Unlike our Jacquère vintages, this Roussette is more rounded, with notes of candied fruit and dried apricot, all supported by a lovely richness and a pleasant freshness. With a little aging, this Savoyard wine opens up the world of candied and tertiary notes, notes that are quite rare for a Roussette, due to the "climate" that gave birth to it. All of it, assumed, without extremes, with balance and freshness.

Food and wine pairings : aperitif, roast turkey, veal blanquette with mushrooms, pike quenelles with Nantua sauce. Serve chilled. between 11 and 13°C – Can be kept in the cellar for several years.

The vine:
Long owned by the Baron of the Empire, Pierre Decouz (1775 Annecy -1814), this plot was acquired by our father in 1993. It is a remarkable place . The term "climate" is a very appropriate metaphor here. Situated at the foot of the great scree of the Toises (name of the place), itself fed by the great avalanche corridor starting from the summit cliffs, it literally plunges into the marsh at the bottom of the valley.

The morning mists, swept away by the first rays of sunshine by natural ventilation, encourage the development of "noble rot" (see Sauternes) at more or less significant gradients depending on the year.

This is not necessarily the desired goal, because it is not a question of developing a sweet profile, but this phenomenon of noble rot, even barely developed at the time of the harvest, is enough to fertilize a certain type of yeast. It is most certainly the elements of the wine derived from these yeasts which, after a more or less long aging time, reveal themselves and synthesize these candied and tertiary notes specific to this Rousette Baron Decouz cuvée (small production 2500 bottles/year).

  • Age of the vines: around 30 years
  • Harvesting and pressing in whole bunches
  • Aging : 15% in barrels and 85% in vats
  • Fermentation by indigenous yeasts
  • Vinification without sulfur
  • Low addition of sulfur during bottling , i.e. a final total sulfur level of 40 mg/l.
  • Bottling at the estate by us after a year of aging, and in accordance with the lunar calendar
