Mondeuse wine: the star grape variety of Savoie wines

Mondeuse de Savoie produces purple wines with a hint of pepper and spice, similar to its cousin Syrah. Wines made from this grape are rarely high in alcohol, even in the warmest years. Mondeuse noir de Savoie is a late-ripening grape variety that, although initially known as a hardy grape, can produce a very indulgent wine if fermented on the fruit. This variety pairs well with charcuterie boards, grilled or sauced red meats, and even game dishes. However, it should be avoided with spicy dishes or strong cheeses.

Persian grape variety: an old Savoyard grape variety brought up to date

The grape variety is called Persan. The color is a deep, intense red. It is also a very acidic grape variety which, combined with its tannic structure, offers excellent aging potential. Persan was originally produced on the steep, south-facing hillsides of Saint Jean de Maurienne. These hillsides, in the locality of "Princens," are the root of the name of this grape variety, Persan. Today, this grape variety is mainly found in the Combe de Savoie, Grésivaudan, and Maurienne. Savoie wines made from this grape variety pair well with raclettes and tartiflettes, but can also be delicious with red meats and game in sauce. If you choose a less tannic cuvée, its acidity will delight you with lake fish or fruity cheeses like Beaufort or Comté.

Pinot Noir grape variety

The grape variety is described as Pinot Noir, highly prized for its young fruit but also for its evolutionary potential and surprising elegance. Aged in oak barrels, it becomes deeper and more intense. This grape variety was cultivated when the Romans arrived in Gaul and its birthplace is in Burgundy. In the Savoy vineyards, AOC Savoie wines made from Pinot Noir can be produced as single varietals or as a blend. The Savoy terroir can produce quite rich, fruity, and beautifully complex Savoie red wines . A young, slightly tannic Savoie Pinot Noir can pair well with some porcini mushroom crozets, while a wine over 5 years old will pair better with a grilled veal entrecôte.

Gamay grape variety

The latter grape variety is Gamay, which is often used to produce very fruity, fresh, and indulgent wines. However, the Gamay grape variety can also produce wines with very interesting character and longevity.
