Crémant de Savoie

Crémant de Savoie is a Savoyard sparkling wine benefiting from an AOP. The most commonly used grape varieties to produce Crémant de Savoie are Jacquère (which forms the base) and Chardonnay, and other grape varieties such as Altesse can also be used.
The process for making Crémant de Savoie is similar to that of Champagne. First, the wine is fermented in vats, followed by a second fermentation in the bottle. During this second fermentation, the carbon dioxide produced by the yeast is trapped inside the bottle, creating the wine's effervescence. Crémant de Savoie must then be aged on yeast for at least nine months. During this time, the dead yeast settles to the bottom of the bottle, giving the wine subtlety and complexity. After this aging period, the wine is disgorged and sealed with the final cork and metal wire cage.
