Food and wine pairing : this wine is enjoyed with sumptuous dishes in sauce such as coq au vin, pot-au-feu or beef bourguignon, but also with certain cheeses such as our Tome des Bauges.
This Mondeuse de Savoie has the particularity of being vinified 65% in barrels and 35% in Terracotta amphora, as the Romans did 2000 years ago. The amphora has the advantage of being completely impermeable and at the same time allowing the red wine to breathe. It is an ideal container for mondeuse because it rounds out the tannins while retaining the freshness and fruit.
Maceration is carried out without sulfur for between 17 and 21 days. Then, aging lasts a minimum of 18 months, always in barrels and amphorae.
Manual harvest between mid-September and early October, depending on the year, harvesting in whole bunches in 300 kg crates to avoid crushing the berries.
Sorting the berries by hand and 100% destemmed.
Bottling at the Domaine by us in accordance with the lunar calendar. This confidential vintage is produced in small quantities, around 2000 bottles per year.
