Tasting :
Straw yellow color, powerful nose combining honeyed, exotic and tertiary notes after 2 or 3 years of aging, notes of undergrowth, opulent palate of candied fruits and exotic notes.
It is a full-bodied Bergeron, without heaviness, with a refreshing exotic finish, which will go perfectly with cooked white meats and lake fish, smoked fish, foie gras, goat or sheep cheeses.
Vinification :
Whole bunch pressing
Fermentation by indigenous yeasts
Vinification without sulfur with a small addition at bottling if necessary, i.e. a final total rate of less than 30 or 40 mg/l.
Breeding :
12 months, 20% in vats and 80% in barrels and demi-muids, then blending of the two aging periods extended for a further 6 months minimum in vats. Bottled by us according to the lunar calendar, then kept for another 2 years before release.
The vine :
This Bergeron was born with the planting of a plot located under the St-Anthelme chapel in Chignin which offers, thanks to its remarkable southern exposure, grapes with solar and delicious ripeness. Today, it is mainly the most beautiful grapes from our plot " La Perette " , planted on clay-limestone soil, on the southwest slope of the mountain "La Savoyarde", which make up this cuvée.
The vineyard is cultivated using organic and biodynamic farming methods . The harvest is carried out entirely by hand between September 10 and 25 (between October 1 and 10 before 2000).
This white wine from Savoie will be certified Organic Agriculture by Ecocert from the 2023 vintage.
