While it can still be defined as a very convivial and accessible Savoyard white wine , it is also, and increasingly, a wine associated with great gastronomy. In any case, we have been able to observe that a Jacquère grape variety wine, grown on living and healthy land, with very controlled yields, can produce complex wines, of great elegance and well-disposed to ageing, contrary to the preconceived ideas of previous generations.
Tasting :
Dress: shiny appearance, light color with a pale yellow tint and green highlights.
Nose: finesse marked by lemony and discreetly honeyed notes: civet and scree, acacia, candied citrus fruits and quince.
Palate: fresh and light, following a mineral line to a precise finish.
Food and wine pairings : Aperitif, asparagus, avocados, grilled sardines, butter trout, salmon tartare, seafood platters, sauerkraut, quiche Lorraine, gougères, Savoyard cheese dishes. Best served chilled, 11°C.
A single grape variety for this wine, the “Jacquère” which is only found in the Savoie region and its borders.
Our various plots of "old vines" , some of which are more than a century old, are located half on the hillsides (draining limestone scree) of the Savoyarde which overlook the various hamlets of Chignin, the other half on the glacial moraines (clay-limestone, more compact), at the foot of the hillsides.
Some of the vineyards have very narrow rows where the vines are very fragile. The soil is worked with a small plow and a horse. This is called "douage" and "débutage."
The harvest is done entirely by hand, between September 10 and 25 (between October 1 and 15 before 2000).
Vinification without sulfur, with a small addition at bottling if necessary, i.e. a total final rate of less than 21 mg/l.
