Exceptional, a wine of the future.
It was the daily “little drop” of our grandmothers (see also the Mondeuse Les Granges Tissot ).
Tasting : From the Mondeuse grape variety, this Savoyard wine, essentially tannic and slightly spicy, develops aromas of black fruits, blackcurrant, blackberry. It can be enjoyed young with rather fruity notes. But its complex structure makes it a wine for laying down. The years will favor the roundness of the tannins and the evolution of the undergrowth notes (only 11.5 to 12.5% vol. alcohol) .
Wine pairing : ideal with a platter of charcuterie, our diots de Savoie or simply roast beef and sautéed potatoes, preferably avoiding spicy cooked dishes. But also with our Savoie cheeses (Tome des Bauges, Reblochon, Abondance...).
Store at 16 to 17°C. Air for one hour beforehand. Keep for 5 to 10 years.
The vine
Our Mondeuse plots extend mainly along the lower slopes of the mountain overlooking Chignin, on clay-limestone soil and glacial moraines. Although moderately sloping, these plots are maintained by hand: weeding, raking, harvesting. To preserve the richness of the soil and protect the vines, nothing beats the precise and caring gesture of the winemaker!
The vineyard is managed using organic farming methods with the introduction of biodynamic methods.
Hand-picked from September 10 to 25, in whole bunches per 300 kg crate to avoid crushing the berries.
Hand sorting of berries and 50% destemming depending on the vintage.
Sulphur-free maceration for 10 days and ageing for 12 months (30% in demi-muids). Low addition of sulphur if necessary at bottling, i.e. a total final rate of less than 30 mg/l.
Bottled at the Domaine by us in accordance with the lunar phases.
