Tasting:
Golden yellow color , brilliant, nose: dried apricot, honey, white peach and exotic fruits, spicy, smoky notes, palate: ample and powerful dried apricot, candied fruits and citrus notes, supported by plenty of fat, freshness and a beautiful minerality.
Food and wine pairings:
Aperitif, raw or smoked fish, white meats in sauce, cheese tarts, steamed potatoes with Bleu de Savoie, goat cheese.
Serve chilled between 12 and 13°.
The vine :
The Exception cuvée is the result of a blend of four distinct terroirs, from four steeply sloping plots located on the heights of the Savoyarde hillsides. These plots extend throughout the "Chignin-Bergeron" appellation area.
La Perette is the most exposed plot. The nature of its clay soil allows the vines to be generous, and strongly orients the profile of the wines towards power. The idea is therefore to tame, to soften.
To this powerful structure, we seek the best complement every year. This will be through touches, depending on the availability of each "color", the mood of the vintage and the winemaker, intuition: a part of Salins to chisel, refine the notes and floral essences, Les Toises less full-bodied, more exotic, full of youth, and finally La Germaine , the most northerly, the most reasonable, the geographical opposite, for freshness, elegance.
The harvest is done entirely by hand, between September 10 and 25 (between October 1 and 15 before 2000). Then it is pressed in whole bunches.
Fermentation by indigenous yeasts.
Vinification without sulfur, only a small addition of sulfur at bottling if necessary, i.e. a total final rate of less than 70 mg/l.
Breeding :
One year, 80% in vats and 20% in barrels and demi-muids, each plot aged separately. Bottling by us and according to the lunar calendar.
