Tasting :
A wine of great finesse, with notes of candied fruit, and a beautiful minerality with some smoky and saline notes on the finish... hence its name!
Food and wine pairings :
Seafood platters, cooked lobster, scallops, smoked fish carpaccio, white meats, soft cheeses (Epoisse, Pont l'Evêque, Maroille, etc.), or blue cheeses (Persillé des Aravis, Bleu de Termignon).
Serve chilled at 12/13°C. Open one hour before. Keep for 3 to 10 years.
The vine :
This plot, located at the place called " Les Salins ", is planted on a terrace on a steep slope (gradient between 50 and 60%), facing due south, just below the high cliffs of the "La Savoyarde" mountain: a real asset that protects the vines from spring frosts or violent summer storms. The other advantage of this plot is its soil, composed of a bright, mineral, white limestone, enriched by remarkable flora in the spring. And all of this is of course reflected in the glass!
Harvested between September 10 and 25, entirely by hand.
- Whole bunch pressing.
- Fermentation by indigenous yeasts.
- Vinification without sulfur with a small addition at bottling if necessary, i.e. a total final rate of less than 50 mg/l.
- Aged for 12 months, in barrels, vats and ceramic amphora .
- Bottled by us according to the lunar calendar.
All our vines are cultivated using organic and biodynamic farming methods .
This wine will be certified Organic Agriculture by Ecocert from the 2023 vintage.
