Mondeuse, the iconic grape variety of our vineyards, is a real star. And it’s no secret any more.
Small volume wine (only 2,000 bottles produced per year) is aged for more than 18 months in oak barrel and amphora.

Food/wine pairings: pot au feu, beef bourguignon, coq au vin, game, Tome des Bauges cheese.

This wine will be certified in Agriculture Biologique by Ecocert from 2020 vintage.

Description

This Mondeuse has the particularity of being vinified for 65% in barrel and 35% in amphora in cocciopesto (a mix of sand, gravel and clay) as the Romans did 2,000 years ago. The amphora has the advantage of being totality impermeable, whilst at the same time allowing the wine to breathe. It’s the perfect recipient for Mondeuse as it smooths its tannins but maintains its freshness and fruit..

  • Grape: 100% mondeuse
  • Organic farming with the introduction of biodynamic techniques
  • The grapes are hand-gripped between the 10th and 25th September
  • Harvested in whole bunches in crates of 300 kg to prevent the berries being crushed
  • Sorting by hand and 100% destemming
  • Maceration without SO2 for 17 to 21 days in demi-muids (600 liters) and in amphora
  • Ageing 18 months minimum in demi-muids and partly in amphora
  • Low addition of SO2 at bottling, i.e. a final total rate under 30 mg/l.
  • Estate bottling respecting the lunar phases
  • Tasting Notes :
      • Aspect : purple, with violet rim and reflections when young
      • Nose : spicy, black fruit
      • Palate : lightly astringent, spicy, blackcurrant, blackberry, cherry
  • Food/wine pairings: pot au feu, beef bourguignon, coq au vin, game, Tome des Bauges cheese
  • Serve at 15 to 16°. Open one hour before serving. Cellaring potential 5 to 10 years.

The vine

This wine used to be made from a parcel “behind the barns” (granges), just next to our grandfather’s house. Today it is a blend of our best Mondeuse grapes from vines with natural, diverse crop cover. These living soils constitute healthy nourishment for the vines, enabling us to make our wines and obtain balanced juices without the use of SO2.

  • Soil : limestone scree and glacial moraine
  • Orientation : on the west slope of the mountain “La Savoyarde”
  • Organic farming with the introduction of biodynamic techniques
  • Harvest : MANUAL – between the 10th and 25th of September since 2016 (between the 1st and 10th of October before 2000)
  • Age of vines : 20 to 80 years
  • Yield :  40 hl/HA
