Made from Mondeuse, this quintessentially Savoyard wine, tannic and lightly spicy, develops aromas of black fruit, blackcurrant, and blackberry.

Our parcels of Mondeuse grow principally on the lower western slopes of the La Savoyarde mountain, in limestone clay soils.

Gastronomic pairings : ideal with a platter of charcuterie, the Alpine specialty of Diots de Savoie or simply roast beef and potatoes.  Avoid spicy dishes if possible.

Description

Made from Mondeuse, this quintessentially Savoyard wine, tannic and lightly spicy, develops aromas of black fruit, blackcurrant, and blackberry. Its fine fruitiness can be appreciated in its youth, but its complex structure makes this a wine that will mellow with a few years in the cellar, smoothing the tannins and bringing out its notes of forest floor.

  • Grape : 100 % mondeuse
  • Organic farming with the introduction of biodynamic techniques
  • The grapes are hand-gripped between mid-September and mid-October
  • Harvested in whole bunches in crates of 300 kg to prevent the berries being crushed
  • Sorting by hand and 50 to 100% destemming according to the vintage
  • Maceration without SO2 for 10 to 22 days, 30% in oak barrel (600 liters)
  • Aged for 12 months (30% in oak barrel)
  • Low addition of SO2 at bottling, i.e. a final total rate of 24 mg/l.
  • Estate bottling respecting the lunar phases
  • Tasting Notes :
    • Aspect : dark, purple, rimmed with violet in its youth
    • Nose : violet, red fruit and pepper
    • Palate : red fruit and spices underpinned by a good tannic structure
  • Gastronomic pairings : ideal with a platter of charcuterie, the Alpine specialty of Diots de Savoie or simply roast beef and potatoes.  Avoid spicy dishes if possible.
  • Serve at 16 to 17°. Open an hour before serving. Cellaring potential 5 to 10 years.

The vine

Our parcels of Mondeuse grow principally on the lower western slopes of the La Savoyarde mountain, in limestone clay soils. Even though they are not very steep, these parcels are tended by hand: weeding, raking, harvesting. To preserve the quality of the soils and protect the vines, nothing beats the precision and care of the winegrower’s hand!

    • Harvest : MANUAL – between 10th and 25th Sept. since 2016 (between 1st and 15th October before 2000)
