This parcel known as Les Salins is planted on very steep fully south facing terraces, just below the high crags of the La Savoyarde mountain where the vines are sheltered from spring frosts and violent summer storms.

A wine of great finesse, with notes of crystalized fruit, superb minerality and lovely smoky, saline notes on the finish…  hence the name !

Food/wine pairings: seafood platter, lobster, scallops, carpaccio of smoked fish, white meats, soft washed rind cheeses (Epoisses, Pont l’Evêque, Maroilles…), or blue cheeses (Bleu de Termignon, Rogue River Blue, Stichelon).

This wine will be certified organic by Ecocert from the 2023 vintage.

Description

A wine of great finesse, with notes of crystalized fruit, superb minerality and lovely smoky, saline notes on the finish…  hence the name!

  • Grape : 100% roussanne
  • Organic farming with the introduction of biodynamic techniques
  • The grapes are hand-gripped between the 10th and 25th September since 2016 (from 1st to 15th October before 2000)
  • Harvested in whole bunches in crates of 300 kg to prevent the berries being crushed
  • Pressed in whole bunches
  • Spontaneous fermentation by wild yeasts
  • Vinification without SO2
  • Aged for 12 months (20% in second-hand oak barrel), 80% in tank (and in amphora from the 2019 vintage)
  • Low addition of SO2 at bottling, i.e. a final total rate below 50 mg/l.
  • Estate bottling respecting the lunar phases
  • Tasting Notes :
    • Nose : very elegant with crystalized fruit intermingled with floral, honeyed and spicy notes.
    • Palate : dense, with good tension and balance between the finesse of the tannins, freshness and minerality
  • Food/wine pairings: seafood platter, lobster, scallops, carpaccio of smoked fish, white meats, soft washed rind cheeses (Epoisses, Pont l’Evêque, Maroilles…), or blue cheeses (Bleu de Termignon, Rogue River Blue, Stichelon).
  • Serve chilled at 12 / 13°C. Open an hour before serving. Cellaring potential 3 to 10 years.
